A fine gin is not made by simply adding flavour to neutral spirit. The traditional gin distillation process asks far more of the distiller: judgement in the choice of botanicals, patience around the still, and a precise understanding of when to keep and when to discard each part of the run. On a remote island, where the pace is set by weather, water and season, that attention has a particular meaning.
Gin may be enjoyed in a cold G&T, a dry Martini or a well-made Negroni, but its character is decided long before the bottle is opened. The bright lift of citrus, the piney backbone of juniper and the gentle warmth on the finish are all shaped by how the spirit meets heat, copper and time.
What makes gin traditional?
At its heart, gin is a spirit in which juniper is the defining flavour. In the UK and across Europe, there are specific legal definitions governing gin, but the more meaningful distinction for a drinker is often between distilled gin and compound gin.
Compound gin is made by infusing or blending flavourings into a base spirit without redistillation. It can be perfectly enjoyable and allows for vivid, immediate flavour, but it tends to offer less integration and fewer subtle changes on the palate. Traditional distillation, by contrast, carries selected botanical oils through the still with alcohol vapour before condensing them back into liquid. The result is usually clearer, more layered and more composed.
There is no single historical recipe. Juniper remains essential, while coriander seed, angelica root, citrus peel, cassia, orris root and local plants can each play a part. A thoughtful recipe is not a roll call of unusual ingredients. It is a balance in which every botanical has a purpose - structure, fragrance, spice, softness or length.
The traditional gin distillation process, step by step
Beginning with a clean neutral spirit
Most traditional gin starts with a high-quality neutral grain spirit. It provides the canvas rather than the finished picture: clean enough to let the botanicals speak, yet with sufficient body to carry their aromatic oils. The spirit is usually diluted with pure water before distillation to a strength suitable for the still and the desired extraction.
Water is easily overlooked, yet it matters at several stages. Its mineral character can influence texture, while its purity affects clarity and consistency. For an island distillery, the provenance of water sits naturally alongside the provenance of the botanicals and the place in which the gin is made.
Selecting and preparing the botanicals
Juniper berries are the foundation. Their resinous, fresh, slightly earthy character must remain present from first nose to final finish. The quality, age and origin of the berries affect the spirit greatly, as does how they are stored and handled before they reach the still.
The supporting botanicals are chosen for their conversation with juniper. Coriander can bring lemony spice; angelica can lend a dry, earthy root structure; citrus can provide lift; floral elements may add perfume. Roots often help bind the aroma together, while seeds and peels supply high notes that arrive quickly on the nose.
Some distillers macerate all botanicals together in the diluted spirit, often overnight or for longer. This allows oils and flavour compounds to begin dissolving before heat is applied. Others use vapour infusion, placing botanicals in a basket above the liquid so the rising vapour draws out their lighter aromatics. Many traditional recipes combine approaches, because a single method may not suit every ingredient.
That is where craft becomes practical rather than decorative. Delicate citrus peel can lose its brightness if treated too aggressively, while a sturdy root may need longer contact to contribute its full character. More botanicals do not automatically make a better gin. Too many can muddy the profile; too few can leave it thin.
The role of the copper pot still
A copper pot still is more than a handsome centrepiece in a distillery. Copper reacts with unwanted sulphur compounds produced during spirit making, helping create a cleaner, softer distillate. Its broad shape and the way vapour moves through its neck can also influence how much weight and flavour are carried forward.
In a small-batch run, the charge of spirit and botanicals is gently heated. As alcohol has a lower boiling point than water, alcohol-rich vapour rises first, carrying volatile botanical compounds with it. That vapour travels through the still and into the condenser, where cooling water returns it to liquid.
The pace of heating matters. Rush the run and flavours can become coarse or indistinct. Distil too slowly and the desired aromatic balance may shift. A skilled distiller listens as much as they measure: monitoring temperature and flow, smelling the emerging spirit and recognising the changing character of the run.

Heads, heart and tails
The first liquid to emerge from the still is known as the heads. It contains highly volatile compounds that are not wanted in the finished gin. As the distillation settles, the cleanest and most balanced portion arrives: the heart. This is the part kept for the final spirit.
Later, as the alcohol strength falls and heavier compounds come through, the distiller reaches the tails. These can bring dull, oily or overly earthy notes if included without care. The exact points at which heads end and tails begin are called cuts, and they are among the most important decisions in distilling.
There is no button that makes those cuts for you. Measurements provide guidance, but aroma, flavour and experience decide the final line. A distiller may keep a slightly wider heart for a fuller, more textural style, or make tighter cuts for a particularly bright and refined profile. Neither choice is automatically superior. It depends on the recipe and the intended drinking experience.
Resting, diluting and bottling
Freshly distilled gin is powerful and often a little disjointed. Resting allows its botanical elements to settle and marry, bringing greater harmony to the aroma and palate. The resting period varies by distillery and style, but it should never be treated as an afterthought.
The spirit is then brought down to bottling strength with water. This is another decisive moment. Bottling at a higher ABV can preserve intensity, texture and aromatic definition, particularly when the gin is mixed with tonic or used in a cocktail. A lower strength may feel lighter and more approachable, though it can mute some of the recipe's finer detail.
Chill filtration may be used to maintain brilliance and prevent haze when the gin is cooled or mixed. Yet filtration also involves a trade-off. Heavy filtration can remove some of the oils that carry flavour and texture, so the right approach depends on the style a distillery wishes to present.
Why traditional distillation tastes different in the glass
A traditionally distilled gin has a progression. Juniper may arrive first, followed by citrus or spice, then a dry root-led finish. Rather than sitting on top of the alcohol, the botanicals feel woven into it. That integration is especially valuable in simple serves, where there is nowhere for a spirit to hide.
Try a well-made gin first with a small sip of chilled water, then with a restrained measure of premium tonic. The water can reveal weight and texture; tonic shows whether the juniper remains clear once sweetness and carbonation enter the glass. For a Martini, choose a dry vermouth sparingly and allow the gin's detail to lead.
The traditional approach is not a promise that every gin will taste alike. It is a commitment to process, restraint and the patient pursuit of balance.
